Roasted almonds temperature

What is the best temperature to roast almonds ?
Currently we are roasting at 150 c for 30 mins in an industrial convection oven.
Even we keep turning the almonds every 5 minutes we are getting uneven roasting.

We also have a rotating pan with gas flame. Would it be suitable to roast the almonds in the rotating pan with gas ?

Roasting almonds require occasional movement in static oven but not in moving oven.Your templates is about right..

Any idea why some turn out to be soft after roasting and cooling

If the nuts are roasted only to develop roasted flavor and taste but not to thevpoint if dryness .
