Could you let me know the reason behind the crumbliness and dryness of eggless sponge vanilla cake on the first day itself.

Generally Sponge cakes specially fatless regardless if its egg or eggless tend to dry up easily ..That can be improved by reformulation.
May I know your recipe so we can modify /improve it.?
