Hi All!
What can we put to make Gummy Candy rather than sugar (let's say we want to make sugar-free gummy candy)? And why?

Inulin and or palatinit. You must still add a little sweetener with. You need the bulking property of sugar as well as a sweetener to compensate for loss of sugar sweetness.

Contains maltitol syrup which is a sugar replacer but unfortunately has a laxative effect if you consume so much of the candy..

Is this a gelatin based or pectin based gummy?

You can try mixing arrowroot powder and stevia into the mix. it would increase the elasticity of the candy.
